Pecan Pralines

 

Ingredients:

2 1/2 cups sugar

1 Tbs. butter

1 cup light cream

2 cups pecan halves
 

Directions:

Combine 2 cups of the sugar, the butter and the cream in a heavy pan and bring to a boil. Put 1/2 cup of sugar in another heavy pan and cook over medium heat, stirring constantly, until it is a rich caramel color. Slowly stir the caramel into the other mixture. Stir in pecans. Cook until a soft ball forms when dripped from a spoon into a glass of water (238F). Remove from heat. Beat until the mixture begins to thicken. Place heaping teaspoons onto parchment paper. Let cool and harden. Wrap individually. Best if consumed within 2-3 days.
