Guacamole
Ingredients:
1/4 cup sweet or red onion, finely diced
1 chipotle chile, chopped
3/4 cup cilantro, torn to small pieces
Large pinch of Kosher salt
Juice of one lime
2 avocados, diced
1 medium tomato, diced
Directions:
Reserve a small amount of onion, cilantro and tomato for topping. Pile the diced onion, chile, cilantro and salt on a cutting board. Chop with a sharp knife then mash into a paste with the flat side of the knife. Transfer to a bowl. Dice the avocado and toss with the lime juice. Add the avocados to the bowl with other ingredients, and mash with a large spoon until avocados are combined. Add diced tomato and season with salt. Top with reserved onion, cilantro and tomato.
