Creamy French Onion Pasta
Ingredients:
2 Cups of rotini pasta, cooked
1 Cup chicken stock
1 packet of Lipton's Onion Soup mix
1 scallion, sliced thin
2 cloves of garlic, minced
1/2 cup of Marsala wine or Cream Sherry
4 tablespoons of light cream
1 tablespoon of flour
1/4 cup of mozzarella cheese, shredded
1 tablespoon of extra virgin olive oil
Directions:
Heat a saucepan, and add olive oil. Saute scallions and garlic, stirring constantly, until soft. Add wine and scrape the bottom of the pan to dissolve the tiny bits. Pour in stock and soup mix packet and bring to a simmer. Simmer for 20 minutes. Put flour into a small bowl and add in several spoonfuls of the cooking liquid. Whisk to smooth, then add the flour mixture to the saucepot with remaining liquid and whisk together well. Continue to whisk in the light cream. Add cooked pasta to the saucepan and toss to coat with cream sauce. Pour contents into an 8" x 8" oven safe dish and top with shredded mozzarella cheese. Set under a low broiler until the mozzarella topping is golden brown.
