Cajun Chicken Penne
Ingredients:
1 lb penne pasta
5 boneless skinless chicken breasts – sliced very thinly
6 tsp Cajun seasoning – more to taste
5 tbsp butter
2 green bell peppers - chopped
1 red bell pepper – chopped
8 fresh mushrooms – chopped
3 green onions – thinly sliced
3 cups heavy cream
½ tsp dried basil
½ tsp lemon pepper
½ tsp lime pepper
1 tsp salt
½ tsp garlic powder
½ tsp onion powder
½ tsp ground black pepper
4 tbsp flour
4 tbsp parmesan cheese – more to taste
Directions:
Cook penne pasta according to box. Mix chicken and Cajun seasoning. Heat butter in large skillet (med. heat), Saute chicken for 5-7 min. Add peppers, mushrooms, green onion. Cook for 2-3 min. Add all spices – you can add a little more Cajun seasoning at this point. Add flour. Mix well – continue to stir and cook for about 3-5 min. Reduce heat and add cream – 1 cup at a time. Cook until heated through. Add parmesan cheese (about 4 tbsp) and stir. Season to taste. Sprinkle w/additional parmesan cheese.
