Fresh Basil Pesto
Ingredients:
2 cups fresh basil leaves, packed
1 cup baby spinach
1/2 cup freshly grated Parmesan-Reggiano or Romano cheese
1/2 cup extra virgin olive oil
1/2 cup pine nuts, toasted
3 medium sized garlic cloves, minced
Salt and freshly ground black pepper to taste
Juice of 1 lemon
Sprinkle of red pepper flakes
1 tsp sugar
Directions:
In food processor - chop pine nuts, garlic, cheese, basil, spinach and pepper flake. Add in lemon juice, salt, pepper and sugar. Add in olive oil to emulsify.
